Ingredients:

  • 1 kg mutton (cut into small pieces)
  • 2 onions (finely chopped)
  • 2 tomatoes (finely chopped)
  • 2 tablespoons ginger-garlic paste
  • 2-3 green chillies (slit)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon garam masala powder
  • Salt (to taste)
  • Oil (for cooking)
  • Coriander leaves (for garnishing)

Instructions:

  1. In a large pan or pressure cooker, heat some oil over medium-high heat. Add the chopped onions and sauté until they turn golden brown.

  2. Add the ginger-garlic paste and sauté for another minute or two.

  3. Add the chopped tomatoes and green chillies, and cook until the tomatoes are soft and pulpy.

  4. Add the turmeric powder, red chilli powder, coriander powder, cumin powder, and salt. Mix well.

  5. Add the mutton pieces and mix well so that the masala coats the meat evenly.

  6. Add enough water to cover the meat and bring the mixture to a boil.

  7. If using a pressure cooker, cover and cook on medium heat for 15-20 minutes or until the mutton is tender. If cooking in a pan, cover and simmer on low heat until the meat is cooked through and tender (this may take around 45 minutes to an hour).

  8. Once the meat is cooked, sprinkle garam masala powder and coriander leaves on top for added flavor.

  9. Serve hot with rice or naan bread.
