Ingredients:
For the rice:
- 2 cups basmati rice
- 4 cups water
- 2 bay leaves
- 4 cardamom pods
- 2 cinnamon sticks
- Salt to taste
For the chicken:
- 1 lb boneless chicken, cut into small pieces
- 1 cup plain yogurt
- 2 tbsp ginger garlic paste
- 1 tsp red chili powder
- 1 tsp turmeric powder
- Salt to taste
- 2 tbsp oil
For the biryani:
- 1 large onion, thinly sliced
- 1/2 cup chopped cilantro
- 1/2 cup chopped mint
- 1/2 cup fried onions (optional)
- 1/2 cup milk
- 1/2 tsp saffron
- 2 tbsp ghee
Instructions:
Rinse the rice under running water until the water runs clear. Soak the rice in water for 30 minutes.
In a large pot, bring 4 cups of water to a boil. Add the bay leaves, cardamom pods, cinnamon sticks, and salt. Drain the soaked rice and add it to the pot. Bring the water to a boil, reduce the heat to low, cover the pot and let the rice cook for 15 minutes. Once the rice is cooked, turn off the heat and let it sit covered for 10 minutes.
While the rice is cooking, marinate the chicken in yogurt, ginger garlic paste, red chili powder, turmeric powder, and salt for at least 30 minutes.
In a separate pan, heat 2 tbsp of oil over medium heat. Add the sliced onions and sauté until they are golden brown. Add the marinated chicken and cook until the chicken is cooked through and the sauce has thickened.
In a small bowl, mix together the saffron and milk.
Preheat the oven to 350°F (180°C).
In a large oven-safe dish, spread a layer of cooked rice. Add a layer of the cooked chicken on top of the rice. Sprinkle chopped cilantro and mint on top of the chicken. Add another layer of rice on top of the chicken. Repeat the layers until you have used up all the rice and chicken.
Drizzle the saffron milk on top of the rice. Sprinkle fried onions on top if using. Dot the top of the biryani with ghee.
Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for another 10-15 minutes until the top of the biryani is golden brown.
Serve the biryani hot with raita or any chutney of your choice. Enjoy!
